Description
When you marinate your salmon in Irish whiskey with a bit of lemon zest, honey, garlic and thyme, the salmon takes on a marvelous flavor and perfectly flaky texture and has a beautiful glazed look at the finish.
Ingredients
- 1 Tablespoon olive oil
- 1 Tablespoon honey
- 1 Tablespoon spicy brown mustard
- 2 Tablespoons Irish whiskey
- 2 Tablespoons apple cider vinegar
- 1 teaspoon dry thyme
- 1 teaspoon lemon zest
- Salt & freshly ground pepper
- A 14 to 16 oz. salmon fillet
Instructions
- Whisk together all ingredients except the salmon in a small mixing bowl.
- Salt & pepper both sides of the salmon, then pour the marinade over the salmon, cover and let marinate for at least an hour or up to 4 hours in the fridge.
- Preheat the oven to 350 F. Line a small baking pan with a silicon baking mat or spray with cooking spray. Set the salmon on the pan and roast in the oven for 12 – 20 minutes, brushing with marinade half-way through. Watch the salmon carefully once it starts to look cooked on the outside and test with a fork. The salmon is done when it just starts to flake easily in the mid-section and is still tender and moist inside. Cut into serving size pieces and serve with a wedge of fresh lemon.
