Here’s a brilliant use for those Brandied Candied Ginger Kumquats … put them in your oatmeal! The little slightly chewy bits of bright orange citrus flavor are so welcome on a cold wintry day. The maple syrup and pecans complement them just perfectly. It’s a quick, hot breakfast that will warm your body and your soul.

- 1/4 cup quick cooking oats
- 1/4 cup water
- 1/4 cup milk (I used 1%, but use whatever kind you like to drink)
- 1 Tablespoon Brandied Candied Ginger Kumquats (recipe here)
- 1 Tablespoon real maple syrup
- A dash of salt
- 1 – 2 Tablespoons pecans, roughly chopped
Instructions
- Set the pecans on a baking sheet and put them in a toaster oven (or regular oven) at 400 to toast.
- Stir together the oats, water, milk, kumquats, maple syrup and salt in a microwave-safe bowl. Microwave on high for 1 minute.
- Take the bowl out and stir. Microwave for 1 more minute. Stir again.
- Check the pecans. They should be fragrant and just lightly browned.
- Top the oatmeal with the toasted pecans and enjoy 🙂
