Description
Bursting with loads of lemon flavor, this rich, soft, dense buttery cake bar is crowned with a light coating of lemon cream cheese frosting for the perfect little lemony sweet treat.
Ingredients
For the lemon cake bars:
- 1/2 cup butter, melted
- 1 cup all-purpose flour
- 3/4 cup sugar
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- Zest of 1 large lemon
- 2 large eggs
- 1/6 cup freshly squeezed lemon juice
- 1/2 teaspoon vanilla extract
- 2 teaspoons lemon extract
For the lemon cream cheese frosting:
- About 2 oz. light cream cheese (Neufchatel)
- 1 – 1 1/2 cups powdered sugar
- About 1 Tablespoon freshly squeezed lemon juice
- If extra lemon flavor is desired, add lemon zest and/or lemon extract
Instructions
- Melt the butter and set aside to cool slightly. Preheat the oven to 350 F. and spray an 8x8x2 or 9x9x2 inch square pan with cooking spray (or line with parchment paper).
- In a large mixing bowl, whisk together the dry ingredients with the lemon zest, then stir in the eggs, lemon juice, and extracts until well mixed. Stir in the melted butter, a bit at a time, until it’s fully incorporated.
- Pour the batter into the prepared pan and bake at 350 F. for about 20 minutes or until the top springs back when lightly touched in the center and a toothpick inserted in the center comes out clean.
- While the cake bars are cooling, mix together the frosting ingredients in a small mixing bowl. Let the bars cool completely before frosting, cutting and eating.
