- 1 small, very ripe banana, mashed
- 2 Tablespoons butter, softened
- 1 large egg
- 1/2 cup peanut butter
- 1/2 cup brown sugar
- 1/2 cup sugar
- 1 teaspoon vanilla
- 1 cup gluten free all purpose flour (I used Bob’s Red Mill)
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 1/2 cups old fashioned gluten free oats
- Mix-ins: dark chocolate chips, chocolate covered raisins, chopped peanuts
Instructions
- Preheat the oven to 350 degrees F. In a large mixing bowl, mix together the banana and butter, then stir in the egg, peanut butter, sugars and vanilla until well mixed.
- Add in the flour, baking powder, baking soda and salt and mix well, then add in the oats and stir some more until they’re incorporated too.
- Then fold in the chocolate chips and other mix-ins as desired and drop by spoonfuls onto a baking sheet sprayed with cooking spray. Bake for about 10 minutes or until they’re a nice golden brown color on top.
