with Asian Ginger Peanut Dressing
Shredded Asian seasoned chicken with mandarin oranges, avocado, sweet peppers and onions, sunflower seeds and cilantro over greens with an Asian Ginger Peanut Dressing, this meal in a salad will satisfy all your senses. I made this salad with some of the leftover shredded peanut chicken I had after making the Asian peanut chicken lettuce wraps. The sweet, juicy little mandarin oranges go oh so perfectly with the chicken. Avocado lends a creamy undertone and then a little more crunchy sweetness from the mini sweet peppers and the sunflower seeds. Some sweet onions rounded it out, and all I did for the dressing was use the same peanut sauce I used to make the chicken. So simple!
It was so yummy that I made this salad a few times, just for me. It made for a very pleasing lunch break in the midst of a busy day. With the pre-made chicken and peanut dressing, it comes together in just a few minutes.
If you haven’t already made the Instant Pot Peanut Chicken, no worries! You can simulate that same flavor by shredding up some leftover chicken meat and stirring in some of the dressing. (You might want to make extra dressing … it’s really kind of fabulous, especially for peanut butter lovers.)
If you’re not a cilantro fan, you can leave off the cilantro … or substitute fresh chopped parsley or basil leaves.

Ingredients
For the Asian Ginger Peanut Dressing:
- 4 Tablespoons PBfit or PB2 (or other peanut butter powder)
- 1 Tablespoon soy sauce
- 1 Tablespoon rice vinegar
- 2 Tablespoons coconut milk
- 1 – 4 teaspoons Sriracha (or more, to taste)
- 1 – 2 cloves fresh garlic, peeled & chopped fine
- 1 1-inch chunk of fresh ginger root, grated
- 1/2 teaspoon sesame oil
For each salad:
- Greens of your choice–romaine, spinach, and/or spring greens (about 2 cups per serving)
- 2 – 3 fresh mandarin oranges (cuties), sliced horizontally — or sub a small can of mandarin oranges
- Sweet or red onion slices (optional) – or chopped green onion
- Sweet mini peppers (or bell peppers), seeded and chopped
- Fresh cilantro leaves, chopped (or parsley)
- Sunflower seeds or chopped peanuts
- About 1/2 cup shredded Asian Peanut Chicken (recipe here) … or see notes for substitutions
Instructions
- In a small mixing bowl, whisk together the dressing ingredients.
- For each serving, fill a dinner-size salad bowl about 3/4 of the way with greens. Top with oranges, onion, peppers, cilantro, sunflower seeds or peanuts and warm chicken.
- Drizzle with the dressing and enjoy!
Notes
To substitute leftover chicken for the Asian peanut chicken, make extra dressing. Shred the chicken and toss with some of the Asian Peanut Dressing. If desired, add sauteed onions and chopped sweet peppers.
