Ingredients

- 2 Tablespoons white wine or champagne vinegar
- 2 Tablespoons white wine
- 1/2 Tablespoon dijon mustard
- 1 – 2 Tablespoons real maple syrup
- 1/4 – 1/2 teaspoon Italian seasoning
- 1/4 teaspoon granulated garlic
- 1 teaspoon of bacon fat
- 1 – 2 Tablespoons extra virgin olive oil
Instructions
- In a small bowl, whisk together all ingredients except the olive oil.
- While whisking, drizzle in the olive oil in a very thin stream. Take a little taste by dipping your finger and add maple syrup if you want it sweeter, and adjust seasonings.
- Store in a covered bottle in the fridge.
Notes
If you are roasting pears, add the juices from the pan to this dressing. Pear juice in this dressing makes it even more heavenly.
