Ingredients

- 4– 5 cups chopped, peeled apples
- 1/4 – 1/2 cup maple syrup (I used 1/4 cup, but if your apples are tart, you might want more)
- 1 Tablespoon quick-cooking tapioca
- 1 teaspoon good quality vanilla
- 2 teaspoons cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1/4 teaspoon allspice
- 1/8 teaspoon cloves
For the topping:
- 1/3 cup packed brown sugar
- 1/2 cup oatmeal
- 1/4 cup whole wheat flour
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 1/4 teaspoon ginger
- 1/4 teaspoon nutmeg
- 1/4 cup cold butter
Instructions
- Preheat the oven to 350 F. In a medium mixing bowl, stir together the apples, maple syrup, tapioca and spices. Spray a 9×9 inch square baking pan with cooking spray and pour the apple mixture into the pan.
- Mix up the topping: in a medium mixing bowl, mix together the brown sugar, oats, flour, salt & spices. Cut the cold butter into small pieces and add to the mixture, then using clean hands, mix the butter into the oat mixture until it is crumbly and no large chunks of butter remain. Sprinkle the topping over the apples.
- Bake at 350 F for about 45 minutes or until the top is golden brown. It’s best served warm with vanilla ice cream (or frozen yogurt) on top.
