For the bottom layer:
- 1/3 – 1/2 cup fresh honeydew chunks
- A few fresh basil leaves, chopped
For the Maple Spice Greek yogurt:
- 1/2 cup plain nonfat Greek yogurt
- 3 teaspoons real maple syrup
- 1/8 – 1/4 teaspoon EACH: nutmeg, cinnamon, and ginger
For the middle layer:
- 1 ripe apricot, pitted and chopped
- 2 ripe strawberries, tops removed and chopped
For the top:
- Several fresh blueberries
- 1 fresh strawberry
- A sprig of fresh basil, for garnish
- Toasted nuts or sweet spiced nuts (optional)
Instructions
- In a small bowl, mix the honeydew and basil leaves and carefully place them in the bottom of your parfait glass.
- Now, in the same bowl, mix the yogurt, maple syrup and spices and pour about half the mixture over the honeydew.
- Chop the strawberries and apricot and add them over the yogurt, then pour the rest of the yogurt on top of that. Top with blueberries, a strawberry and a sprig of fresh basil or mint.
- For a little crunch, add chopped toasted nuts (or sweet spiced nuts).
