Mary’s Cinnamon Roll Cake

A delightful buttery cake with all the cozy flavors of a cinnamon roll!


Ingredients

For the cake batter:

  • 1 1/2 cups all-purpose flour
  • 1/4 tsp salt
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 3/4 cup milk
  • 1 egg
  • 2 teaspoons vanilla
  • 1/4 cup (1/2 stick) butter, melted

For the cinnamon roll topping:

  • 1/2 cup (1 stick) butter, softened
  • 1/2 cup brown sugar
  • 1 Tablespoon all purpose flour
  • 1/2 Tablespoon cinnamon

For the glaze:

  • 1 cup powdered sugar
  • 1 teaspoon vanilla
  • 1 1/22 Tablespoons milk

Instructions

  1. Heat oven to 350 F. Spray a 9x9x2 inch square pan with cooking spray. Set aside.
  2. In a large mixing bowl, whisk together the flour, salt, sugar, and baking powder, then stir in the milk, egg and vanilla until well mixed. Slowly add the melted butter, stirring after each addition. Pour the batter into the prepared pan.
  3. In a small mixing bowl, cream together the butter, brown sugar, flour and cinnamon until well mixed. Plop by spoonfuls all over the cake batter, then use a knife to swirl it into the cake batter. Try not to leave any spots without the cinnamon and not to over-concentrate it in any one spot.
  4. Bake at 350 F. for 35 – 40 minutes or until a wooden pick inserted in the center comes out clean.
  5. Stir together the glaze ingredients until smooth, then drizzle all over the warm cake.
