I pay attention to what the people around me love … especially when it comes to food and drink preferences. I can tell you the special food loves of many of my friends and coworkers, things that they shared with me at one moment and I tucked away for future reference.
One of our developers at work is especially partial to peanut butter. We had a craft fair at work and I made some goodie boxes for the occasion … as I was putting things together, I remembered his love for peanut butter and I know there are so many others who love peanut butter (yeah, me too!) and I decided there needed to be an entire box dedicated to the love of all things peanut butter.
So I decided I would make a peanut butter lover’s goodie box. I had the peanut butter mashup bars that are always a huge hit. But I needed some more peanut butter treasures to fill the box. A peanut butter fudge … yes! That was definitely a requirement in this holiday goodie box.
I went looking at peanut butter fudge recipes (forgetting that I already had one on my blog … silly me!) But this time, I stumbled across Alton Brown‘s peanut butter fudge recipe, which is full of butter and powdered sugar, but it’s simple in the making … a quick microwave recipe. And surely it could be tweaked to make it even more fabulous, yes? Yes!
Personally, I found this fudge too sweet, but all my taste testers disagreed with me. I sought out several tasters to make sure … and then I sought several more and the look on their faces when they ate this fudge was a look of pure bliss. Their eyes rolled over as if they were in heaven and they said this fudge melts in your mouth. Okay then! I guess I need to let go of my personal overly critical judgement and make this recipe heard.
The person I had in mind when I made this fudge mentioned to me that it was marvelous … so I am pleased. The peanut butter lover I had in mind is happy with my fudge. That’s all that I wanted. Many others like it as well and the peanut butter lover’s box was a great hit! I am content. Life is good.
PrintMelt in your Mouth Peanut Butter Fudge
- Prep Time: 10 minutes
- Cook Time: 10 minutes
- Total Time: 20 minutes
Ingredients
- 8 oz. (2 sticks) unsalted butter, cut into chunks
- 1 cup smooth peanut butter
- 2 teaspoons vanilla extract
- 1/4 – 1/2 teaspoon salt
- 1/4 teaspoon cayenne
- About 1 lb. powdered sugar
For the top: toffee bits & mini chocolate chips
Instructions
- Prepare an 8×8 or 9×9 inch square pan by spraying with cooking spray and lining with parchment paper, pushing the paper into the corners. Spray the paper with cooking spray as well.
- In a medium/large microwave-safe mixing bowl with plenty of room for expansion, cut up the butter into chunks, add the peanut butter and microwave on high for 2 minutes. Stir well, then microwave for two more minutes. The mixture will have expanded a lot and will be very hot and bubbly so take care when removing from the microwave!
- Stir in the vanilla, salt, cayenne and then the powdered sugar, a bit at a time, until the mixture looses its shininess and it is quite hard to stir. Pour this mixture into the prepared pan and press down with your hands to smooth it out.
- While it’s still warm, top with toffee bits and mini chocolate chips, pressing down gently to embed the toppings into the fudge.
- Let cool in the fridge or a cool place until the fudge is completely cool and hardened. Cut into 1 inch squares. Store in an airtight container in a cool place until serving time.
