- 8 oz. (1 stick) butter, cut into chunks
- 1 cup smooth peanut butter
- 2 teaspoons vanilla extract
- 1/4 – 1/2 teaspoon salt
- 1/4 teaspoon cayenne
- About 1 lb. powdered sugar
For the top: toffee bits & mini chocolate chips
Instructions
- Prepare an 8×8 or 9×9 inch square pan by spraying with cooking spray and lining with parchment paper, pushing the paper into the corners. Spray the paper with cooking spray as well.
- In a medium/large microwave-safe mixing bowl with plenty of room for expansion, cut up the butter into chunks, add the peanut butter and microwave on high for 2 minutes. Stir well, then microwave for two more minutes. The mixture will have expanded a lot and will be very hot and bubbly so take care when removing from the microwave!
- Stir in the vanilla, salt, cayenne and then the powdered sugar, a bit at a time, until the mixture looses its shininess and it is quite hard to stir. Pour this mixture into the prepared pan and press down with your hands to smooth it out.
- While it’s still warm, top with toffee bits and mini chocolate chips, pressing down gently to embed the toppings into the fudge.
- Let cool in the fridge or a cool place until the fudge is completely cool and hardened. Cut into 1 inch squares. Store in an airtight container in a cool place until serving time.
