Mushroom & Red Cabbage Breakfast Skillet ~ a low carb, high fiber breakfast that is full of flavor, color and will keep you full and satisfied all morning long. Ready in 15 - 20 minutes!


When are you ever greeted in the morning by a bright colorful PURPLE breakfast that’s just bursting with flavors AND good for you too? Here’s a low carb, high fiber, high protein, heart healthy breakfast that tastes delightful, looks stunning and is so quick to throw together! The entire dish can be prepped and cooked in about 15 – 20 minutes. Plus it’s meatless, great for diabetics, and gluten free. How can you go wrong with that?

I stumbled across this dish when I was getting bored with my breakfast routine … and also trying to up my daily fiber (for my heart health). I realized several weeks ago (maybe a month or two?) that I wasn’t getting enough fiber in my diet. I was eating TONS of salads, fruits and veggies, lean meats, nuts and seeds, yet my daily fiber consumption was very low because leafy greens have almost no fiber and I wasn’t adding enough other things to fill up my fiber quota. I know fiber is key for lowering cholesterol and maintaining a healthy cardiovascular system, so I decided I needed to start monitoring my fiber intake.

I literally searched for “high fiber low carb breakfast” and this recipe appeared, aptly named “Low Carb High Fiber Breakfast Skillet”. I was SO intrigued by the combination of flavors and ingredients in the recipe … never would I have dreamed of combining red cabbage with mushrooms, tomatoes, beans, rosemary and eggs, but here was this stunning photo, just daring me to try it. I happened to have some red cabbage in my veggie drawer and some fresh baby bella mushrooms and campari tomatoes that looked oh so perfect for this occasion!

My favorite color happens to be purple so this dish totally spoke to me from the beginning. I couldn’t WAIT to taste it and I have tell you … it did NOT disappoint!

Do you need the herbs? YES! The aromatic herbs (I used rosemary) add so much flavor to the dish. I highly recommend including fresh herbs. It’s really kind of amazing how 2 simple sprigs of rosemary on top can flavor the entire dish. I don’t have any fresh dill yet, but I imagine fresh thyme would be lovely on this dish too.

Mama Bullock’s recipe included meat … I opted to skip out on the meat because I felt it wasn’t really needed (and I’m not in need of any more protein with all the other protein-rich foods I eat), but hey, if you want some meat in your breakfast skillet, go ahead and add it.

Can you use other veggies? Absolutely! Feel free to swap out some of the vegetables in this recipe for whatever you have on hand or prefer.

Mushroom & Red Cabbage Breakfast Skillet

  • Prep Time: 5 minutes
  • Cook Time: 15 minutes
  • Total Time: 20 minutes
  • Yield: 1 serving 1x

Ingredients

Scale
  • 12 teaspoons grass-fed butter
  • 1/4 cup thin-sliced onions, roughly chopped
  • 1 cup thin-sliced, chopped red cabbage
  • 1 cup sliced baby bella mushrooms
  • 1/2 cup cooked beans
  • 2 campari tomatoes, chopped
  • Trader Joe’s 21 Seasoning Salute (or Mrs. Dash or other salt-free seasoning of choice)
  • Red Robin Seasoning (or your favorite seasoned salt)
  • Freshly ground pepper
  • 12 eggs
  • 2 sprigs of dill, rosemary or aromatic herb of choice
  • For the top: a bit of crumbled feta cheese (optional)

Instructions

  1. Heat the butter in a medium skillet over medium heat until melted and bubbly. Add the onions and saute for a few minutes, until soft and translucent, then add the cabbage and mushrooms. Cover and cook for a few minutes or until the mushrooms are tender.
  2. Stir in the beans and tomatoes and season generously with the seasonings and pepper.
  3. Make wells in the center for the egg(s) and crack the eggs into the holes. Sprinkle the eggs lightly with salt & pepper. Set the sprigs of herbs in the pan. Cover and continue cooking until the egg whites are set and solid white. If you like your yolks set, cook a few more minutes.
  4. Remove from heat, slide onto a plate and sprinkle with feta (if desired).
