I finally relented … I went into the kitchen fully to make Lauren Kelly’s lightened up peanut butter chocolate bars, but my apricots started talking to me. I was minding my own business, trying to follow the recipe as best I could (sans the sucanat, of which I have none) and the (partly-eaten) bag of dried apricots that was sitting on the counter just INSISTED to be included.
So I obliged. Health-wise, I figure the dried apricots totally make up for the lack of sucanat and I love the bit of “chew” they add to the eating experience. I gave some to my friend and she says they taste sort of like a PB&J sandwich (you know, with apricot jam!) but with chocolate on top. Yeah, actually they do.
The quality of the chocolate you use is key, in my book. And, the darker the better, but you know when you make them you should please yourself and make them according to your own tastes.
PrintPeanut Butter Apricot Bars

- Total Time: 15 minutes
- Yield: 24 - 36 bars (depending on how large you cut them) 1x
Ingredients
- 2 cups graham cracker crumbs
- 1 cup powdered sugar
- 1 cup peanut butter
- 2/3 cup dried apricots, finely chopped
- 1/4 cup butter, melted
- 1/4 teaspoon salt
- 1 1/2 cups semi sweet or dark chocolate chips
Instructions
- Spray a 13 x 9 x 2 inch pan with cooking spray.
- In a mixing bowl, mix together everything except the chocolate chips. You may need to use your hands to get it all mixed well.
- Press the peanut butter apricot mixture into the prepared pan.
- Put the chocolate chips in a microwave safe bowl and microwave on high for 90 seconds. Stir, stir, stir. Put back in the microwave for 30 seconds. Stir more … the chocolate chips should melt as you stir. If still not melted, microwave another 30 seconds and stir.
- Smooth the melted chocolate over the peanut butter layer. Let sit in a cool place for 5 – 10 minutes or until the chocolate just begins to set. Cut into small squares before the chocolate hardens.
