- 2 cups graham cracker crumbs
- 1 cup powdered sugar
- 1 cup peanut butter
- 2/3 cup dried apricots, finely chopped
- 1/4 cup butter, melted
- 1/4 teaspoon salt
- 1 1/2 cups semi sweet or dark chocolate chips
Instructions
- Spray a 13 x 9 x 2 inch pan with cooking spray.
- In a mixing bowl, mix together everything except the chocolate chips. You may need to use your hands to get it all mixed well.
- Press the peanut butter apricot mixture into the prepared pan.
- Put the chocolate chips in a microwave safe bowl and microwave on high for 90 seconds. Stir, stir, stir. Put back in the microwave for 30 seconds. Stir more … the chocolate chips should melt as you stir. If still not melted, microwave another 30 seconds and stir.
- Smooth the melted chocolate over the peanut butter layer. Let sit in a cool place for 5 – 10 minutes or until the chocolate just begins to set. Cut into small squares before the chocolate hardens.
