Peanut Butter Cup Spider Cookies

Ingredients

  • 1/2 cup salted butter, softened
  • 1/2 cup Imperial Sugar granulated sugar
  • 1/2 cup firmly packed Imperial Sugar brown sugar
  • 1 cup creamy peanut butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 7.5 ounces by weight all purpose flour (about 1.5 cups measured)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • About 24 peanut butter cups, unwrapped
  • About 48 candy googly eyes
  • 2 oz or so of milk or semi-sweet chocolate, melted + a long toothpick for painting the spider legs

Instructions

  1. Preheat the oven to 350 F. Line a cookie sheet with a silicon baking mat or spray with cooking spray.
  2. In a large mixing bowl, cream together the butter, peanut butter and sugars until fluffy. Stir in the egg and vanilla until well mixed.
  3. Sprinkle the flour, baking soda, baking powder and salt over and stir to mix.
  4. Use a medium cookie scoop to scoop up equally sized balls of cookie dough. Shape into balls and slightly flatten them. Bake for 12 – 14 minutes. or until lightly browned on bottom.
  5. Remove from oven and gently press a peanut butter cup, larger side down, onto each cookie. The peanut butter cup will melt as it sets into the cookie. While the chocolate is still hot and melty, set 2 eyes into the side of each peanut butter cup. Remove the cookies from the baking sheet and let sit in a cool place until the chocolate is set.
  6. Melt the chocolate, then dip a long toothpick into the chocolate and use the toothpick to “paint” 8 legs onto each cookie. I found it works best to get about 3/4 inch of chocolate on the toothpick, then set the toothpick sideways on the cookie, setting it right by the peanut butter cup then making a gentle motion down and away.
