- 1 small, very ripe banana, mashed
- 2 Tablespoons butter, softened
- 1 large egg
- 1/2 cup peanut butter
- 1/2 cup brown sugar
- 1/2 cup sugar
- 1 teaspoon vanilla
- 1/2 cup all purpose flour
- 1/2 cup whole wheat flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 1/2 cups old fashioned oats
- About 1/2 cup of dark chocolate chips
Instructions
- Preheat the oven to 350 degrees F. In a large mixing bowl, mix together the banana and butter, then stir in the egg, peanut butter, sugars and vanilla until well mixed.
- Add in the flours, baking powder, baking soda and salt and mix well, then add in the oats and stir some more until they’re incorporated too.
- Then fold in the chocolate chips and drop by spoonfuls onto a baking sheet sprayed with cooking spray. Flatten the little cookie-lings a bit with your hands, then bake for about 10 minutes or until they’re a nice golden brown color on top.
