For the pumpkin baked oat bran:
- 1 1/2 cups pumpkin puree
- 1/4 cup real maple syrup
- 3/4 cup Silk coconut milk (or milk of your choice)
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 cups oat bran (or oatmeal)
- 1/4 cup PBFit, PB2 or almond flour
- 1 teaspoon baking powder
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 4 – 6 stevia packets (optional)
- 3 oz. toasted pecans or walnuts
For the maple cream cheese drizzle:
- 3 oz. Neufchatel cheese, softened
- 2 Tablespoons maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon pumpkin pie spice
Instructions
- Preheat the oven to 350 F. Spray a 9x9x2 inch square baking pan with cooking spray.
- In a medium mixing bowl, stir together the pumpkin, maple syrup, coconut milk, egg and vanilla until well mixed. Stir in the remaining ingredients. Spread the mixture evenly into the prepared pan.
- Bake at 350 for 30 – 35 minutes or until set in the middle and lightly browned.
- While the oats are baking, stir together the maple cream cheese ingredients in a small bowl. Drizzle with the maple cream cheese mixture and enjoy!
