There are certain simple ideas that never occurred to me, but once I see them, I just HAVE to try them. That was the case with these pretty berry cheesecake bites. I saw them, pinned them, then shortly thereafter, walked into the kitchen and made them. I didn’t have a big party to go to. I didn’t even have anyone around who would taste them. I just wanted to make these beautiful berry bites.
I happened to have lots of berries on hand after the big graduation party … all I needed was some cream cheese. A quick stroll through my fridge uncovered some of that, then I grabbed a couple things from the cupboard and got to work.
These little cheesecake bites are insanely easy to make and they taste SO dang good! I put the rest of them that were left after I ate my fill of berry cheesecake bites into a covered container, stashed them in the fridge and shared them at cooking class the next day. Everyone loved them … one gal even took a picture of them with her phone.
I would say these darling cheesecake bites really are best eaten right away or within a couple hours, but in a pinch, you can still enjoy them the next day.

- Prep Time: 15 minutes
- Total Time: 15 minutes
- Yield: 20 - 40 cheesecake bites 1x
Ingredients
- 4 oz. Greek cream cheese (or Neufchatel), softened
- 1/4 cup powdered sugar
- 1/2 teaspoon lemon extract
- 1/8 – 1/4 teaspoon vanilla extract
- Fresh strawberries, cut in half lengthwise … and/or large raspberries
- Fresh blueberries
Instructions
- In a small mixing bowl, mix together the cream cheese, powdered sugar and extracts until well mixed.
- Clean and prep the berries, then pipe the mixture onto strawberry halves and top with a couple blueberries and/or into large raspberries and top with a blueberry. Set each berry on a platter as you finish it.
- Serve immediately, or cover and refrigerate until serving time.
