Ingredients

- About 4 cups fresh asparagus spears, chopped into 1 inch pieces
- 1/2 Tablespoon olive oil from marinated feta
- 2 – 3 cloves of garlic from the marinated feta
- Red Robin Seasoning & freshly ground pepper
- 6 – 8 cubes of marinated feta (recipe here)
Instructions
- Preheat the oven to 400 F.
- In a medium mixing bowl, toss the asparagus with the olive oil and garlic and about 3 cubes of feta. Sprinkle with Red Robin Seasoning & freshly ground pepper and toss again to mix.
- Pour the asparagus onto a small baking sheet and put in the oven to roast for about 10 – 15 minutes. Remove from oven and taste a large chunk from the middle. If it is perfect crisp-tender, test another couple pieces. If not, stir the asparagus and roast for another 5 minutes or so or until the asparagus is crisp-tender and bright green.
- Crumble some additional marinated feta over the asparagus at serving time. Enjoy while it’s still warm!
