Ingredients

- 4 cups (about 1 lb) fresh strawberries, hulled & halved
- 1 cup sugar
- 5 – 7 large basil leaves, chopped
- 2 teaspoons vanilla extract
- 1 cup buttermilk
- 1/2 cup heavy whipping cream
- 1/3 cup light sour cream
Instructions
- Preheat oven to 425 F. Toss the strawberries with the sugar and spread them out on a 13 x 9 x 2 inch pan. Roast in the oven for 15 – 20 minutes. Set in the fridge or freezer to cool off.
- Pour the berries and the juices from the pans into a blender and blend with the basil, vanilla, buttermilk, whipping cream and sour cream until smooth and the basil is chopped into tiny bits.
- Process in an ice cream maker according to manufacturer’s instructions.Transfer to an airtight container and freeze until ready to serve.
