Ingredients
Scale
For the simple syrup:
- 6 large plums, pitted and cut into quarters
- 1 small sprig of rosemary
- 1/2 cup brown sugar Stevia in the Raw
- 1/2 cup real maple syrup (or substitute more stevia + 1/2 cup water)
- 1/2 cup water
- 2 teaspoons real vanilla extract
For each cream soda:
- Ice
- Club soda
- 1 shot simple syrup
- 1 shot fat free half & half
Instructions
- Put the simple syrup ingredients in a medium saucepan over medium-high heat. Bring to a boil, then reduce heat to a simmer and let cook for 15 – 20 minutes or until the plums are very soft and have released their juices. Let the syrup sit for a while to cool.
- To make a soda: fill a glass most of the way with ice, then pour in club soda to fill about 3/4 of the glass. Pour in a shot of the syrup, stir and taste … if not sweet enough, add a little more syrup. Then for the magic part: in a slow stream, add the cream and watch the beautiful swirls. Stir and enjoy!
Notes
You’ll get the best swirls in a hurricane style glass or other glass with curves.
