Simple, Healthy and Fun Snacking with Probiotic Dill Pickle Dip

This pickle dip is loaded with tiny chunks of real dill pickles swimming in a creamy mixture of Greek yogurt, mayo, a bit of mustard and some simple seasonings you probably have on hand. If you have a mini food processor, you can whip up this dip in about 5 minutes. You can can start dipping immediately, but I find it’s better after it’s had time for the flavors to infuse. The dip thickens as well as it chillaxes in the fridge.

Dips make me happy. I’m a total sucker for French Onion dip (the kind made with real sour cream) dipped in potato chips, but that’s not exactly health food. I don’t allow myself to have those things in the house very often. I realized the other day that it’s been a long, long time since I have made any dips (aside from Dirty Queso, which I make for the nieces and nephews literally every time I see them). And I also discovered that I have an entire shelf in my fridge that is mostly just fermented pickles that I made last fall to preserve all the awesome cucumbers. I don’t actually eat pickles that often, though. So the pickles have been stockpiling.


So, in the interest of using up some of the plethora of pickles and also satisfying my snack happy zone, I decided to make a pickle dip. And also get a healthier chip for dipping. I chose Sunchips because they’re whole grain and they taste great.

The child inside of me made a deal with the parental voice in my head. I told my inner child that she could have Sunchips for dipping AFTER she ate a serving or two of veggies in the dip. It was a funny deal. I found the veggies make my body feel much better than the Sunchips. So I found myself really enjoying my veggie snack almost more than the chips! But I’m still doing both. Because that was the deal!

Why Probiotic Pickle Dip?

I have tried my hand at pickle dip in the past, made with cream cheese and pickles. I loved that version, too, but it was a bit too thick for the delicate Sunchips. This pickle dip plays well with both Sunchips AND veggies. Plus it’s loaded with probiotics from the active cultures in the Greek yogurt and the fermented pickles.

For those of you that aren’t familiar with probiotics, they are foods that supply the “good bacteria” that live in your gut. Probiotics definitely help with gut health, but also can strengthen your immune system, soothe skin issues and acne, and help prevent cavities, gum disease, vaginal and urinary tract infections. Especially if you are taking antibiotics which kill even the good bacteria in your body, probiotics help restore a healthy biome in your gut. But even if you’re not having gut issues or on antibiotics, probiotics help keep you healthy overall!

Greek yogurt supplies calcium, protein and a good part of the probiotics in this dip. The pickles provide the rest of the probiotics, especially if you use fermented pickles.

Probiotic Dill Pickle Dip

Ingredients

Scale
  • About 1/2 cup finely chopped dill pickles (for more probiotics, use fermented pickles – recipe here)
  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 12 teaspoons mustard (I used spicy brown mustard)
  • 1/2 teaspoon EACH: granulated garlic, onion powder, dill
  • 1/4 teaspoon bacon salt (or salt)
  • Pickle juice, if needed, to thin

Instructions

  1. In a mini food processor (or using a knife), chop the pickles into tiny pieces. Measure out the pickles AFTER chopping.
  2. Add the rest of the ingredients to the processor (or a bowl) and process until smooth (or stir until well mixed). Taste and adjust seasonings to your liking. 
  3. Enjoy immediately, or for best results, cover and refrigerate for at least 2 hours. 

Notes

Feel free to use fresh dill in place of the dried if you have it. You’ll probably want more like a Tablespoon of fresh dill, but add to your liking.
