Soft chewy brownie power bars that are ready in minutes … yes, that’s right, no baking, no complicated steps, just stir them together and press into the pan, then cut into bars and there you have a lovely HEALTHY low calorie high protein high fiber treat just waiting for you whenever you need a chocolate fix. Or some energy.
I’ve been making these bars for myself for months and eating one (sometimes two) just about every day, thinking that one of these days I really need to actually take some photos and let you, my dear foodie friends, in on the secret. You see, I took my Peanut Butter Power Bars recipe and chocolatized it and it was oh, so much better. (Did you know chocolate could be a VERB?) I decided these bars need no elaboration, no added nuts or seeds or chocolate chips. Because that little bit of dark cocoa powder makes it. If you want to add extra things, oh yes, go ahead, but for me, I’m going to keep it simple and enjoy these just like they are.
BUT hey, I need to tell you guys something really important. I’m so excited … It’s that time of year again … YES, it’s time for #Choctoberfest! For the past three years I’ve been participating in this event and I’m so happy to be participating again this year … because, you know, chocolate. PrintSoft & Chewy Peanut Butter Brownie Power Bars
- Prep Time: 10 minutes
- Total Time: 10 minutes
- Yield: 12 small bars 1x
Ingredients
- 2/3 cup PBFit or other powdered peanut butter
- 1/4 cup water
- 2 Tablespoons real maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 2/3 cup oat bran
- 1/3 cup dextrin fiber powder (such as Benefiber … not psyllium)
- 2 – 3 Tablespoons dark cocoa powder
Instructions
- Line a small rectangular pyrex dish or 9×5 in loaf pan with parchment paper.
- Stir together all the ingredients in a medium mixing bowl. You might have to use your hands at the end to finish mixing. It might look like the bars won’t stick together, but they should start to come together once everything is mixed well. If not, add a tiny bit of water. Taste and add some stevia or your preferred sweetener if more sweetness is desired.
- Press the mixture into the pan and set in the fridge for 2 hours. Pull out the parchment paper and cut into 12 bars.
Notes
If you don’t have or don’t want to use oat bran, you can use oatmeal in its place. Also, you can substitute oat bran (or oatmeal) for the fiber powder, but you’ll need a little extra water or maple syrup then. Nutrition content will change if you make substitutions.

A great after gym pick me up. Thanks for sharing.
Absolutely! Thanks for visiting. 🙂
Yum! These sound so good. I am always looking for recipes that us PB powder, since I usually have it on hand.
I use it SO much since I started making these. I hope you enjoy them as much as I do, Allison!
[…] been making homemade “power bars” for myself for quite a while now, but last time I made them, I shaped them into little balls […]
If I choose to use oatmeal, is there a type that works better? Old fashioned, quick, etc?
Hi Kristin,
Quick oats are probably best since they are pre-cooked, but in a pinch I think old fashioned oats would work too.
Thanks for asking,
Ann
