The perfect soft, fluffy peanut butter cookie with a crispy edge and an amazing melt in your mouth texture. These cookies are seriously hands down THE BEST peanut butter cookies I have ever tasted.
I seriously love peanut butter, but I’ve never been a huge fan of peanut butter cookies. They are typically just too crisp for my tastes. My son adores peanut butter cookies and has sought them out on many occasion. One day he told me he found this amazing looking peanut butter cookie recipe and he wanted to make these peanut butter cookies. He showed them to me … yep they did look really good. And then he told me we HAD to go to the cooking store so he could make his peanut butter cookies.
Say what? What could we possibly need that we didn’t have already in our amply supplied kitchen?
A cookie scoop. I scoffed at him. Why the heck would we need a cookie scoop? Certainly there must be something you could use in our kitchen! Ice cream scoop? Nope, too big. Melon baller? No, mom. We NEED a cookie scoop. He told me he’d buy it with his own money. So we took a trek to the cooking store (a very dangerous place for me …) and he found the perfect cookie scoop he was looking for right away and purchased it. Of course my daughter also found a teapot that she just HAD to have and I found a zester/microplane that I had to buy for my dad too. I managed to escape the store without buying anything additional for myself. But now we had the cookie scoop so he could make his peanut butter cookies.
My daughter and I dropped him off at home so he could make his cookies while we ran off to the humane society to meet a cat. This cat meeting process took quite a while … first we had to sit with the cat for 20 minutes in a room so we could decide if we liked him. He was so sweet and affectionate … how could we NOT bring him home? The adoption process took quite a while too. But finally, a couple hours later we came home with our new kitty and my son had made his cookies. These cookies looked just like the photos of the cookies he’d shown me, nice and fluffy and very pretty. Not like any peanut butter cookie I’d ever met before. I really didn’t want to eat one … it’s not exactly on my low cholesterol diet, but he said I HAD to try one. So I did. And damn, that cookie was really freaking good! I didn’t regret eating it one little bit.
Okay, son, you’re right. We needed a cookie scoop.
If you don’t have a cookie scoop, you can head to your local cooking store or purchase one on Amazon. You won’t regret it.
PrintSoft Chewy Peanut Butter Cookies
- Prep Time: 15 minutes
- Cook Time: 15 minutes
- Total Time: 1 hour
- Yield: About 24 cookies 1x
Ingredients
- 1/2 cup salted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup firmly packed brown sugar
- 1 cup creamy peanut butter
- 1 large egg
- 1 teaspoon vanilla extract
- 7.5 ounces by weight all purpose flour (about 1.5 cups measured)
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350 F. Line a cookie sheet with a silicon baking mat or spray with cooking spray.
- In a large mixing bowl, cream together the butter, peanut butter and sugars until fluffy. Stir in the egg and vanilla until well mixed.
- Sprinkle the flour, baking soda, baking powder and salt over and stir to mix.
- Use a medium cookie scoop to scoop up equally sized balls of cookie dough. Place the balls of dough directly on the prepared baking sheet and bake for 12 – 14 minutes. or until lightly browned on bottom. .

Those cookies look soft and delicious! I’d rather have a hand of cookies than about anything else, and chewy peanut butter sound amazing to me!
