Spanakopita is one of the most popular and beloved snacks in Greece and is becoming more and more popular world wide. I’ve re-created this delightful Greek spinach & feta pie in bite-sized wonton form. These crunchy Spanakopita Wontons cook up in the air fryer in just four minutes! And they deliver all the cheesy garlicky Greek goodness you love.
Shhh! You don’t have to tell anyone these lovely crunchy treats are actually healthy. Serve them up on game day (or any day, really) and watch them disappear.
You can make the little wontons all up ahead of time and freeze them, then reheat in the air fryer. OR you can make the filling and make however many you like whenever you’re craving spanakopita.
Wondering why I didn’t leave my spanakopita in the traditional triangular form? Because the edges got overly browned in the air fryer when I left them triangular. Folding the points of the triangle over keeps them from over-browning. So they get crisp but not burnt.
Don’t have an air fryer? No worries, you can bake these little beauties in the oven too. If you don’t have time to shape the wontons, a simpler option is to make wonton cups (or purchase phyllo cups) and simply dish the filling into the cups.
What’s the secret to the best tasting spanakopita filling?
I did two things to make my spanakopita wontons extra cheesy and flavorful. First and most importantly: use flavorful marinated feta if you can. By marinated feta, I don’t mean the kind you buy at the store. I mean THIS:
Marinating feta is super simple. You take a block of feta, cut it into chunks, then stuff it in a jar with garlic, red pepper flakes, Italian seasoning and a sprig of fresh rosemary (if you have it). Cover the whole thing with extra virgin olive oil and let sit for at least two hours. (See the recipe here.) As long as the feta is completely submerged in the oil, you can store marinated feta in the fridge for MONTHS.
Marinated feta brings a whole new depth of flavor to spanakopita. Plus you can use marinated feta in a variety of other dishes. And it’s amazing on salads (like this zucchini chickpea salad, this cheese bliss spinach salad or this bacon feta tomato salad). I urge you not to skip this step!
Secondly, I used some cottage cheese in the filling. I know, that’s not the traditional way the Greeks would do it but it’s DELICIOUS. Plus it lightens up the filling a bit to reduce the calories and up the protein and calcium content.
What to serve with Spanakopita Wontons?
Serve them with creamy tzatziki, hummus or a Greek avocado garlic dip (like I did here – recipe coming soon!)

Ingredients
- 1 Tablespoon extra virgin olive oil (plus more for brushing) – best to use the olive oil from the marinated feta
- 1 medium onion, peeled & chopped
- 3 – 4 cloves garlic, peeled & chopped
- 8 oz spinach, chopped (fresh – or frozen, thawed and drained)
- 1/2 cup cottage cheese
- 2 – 3.5 oz. feta cheese, crumbled (I highly highly recommend marinated feta – recipe here)
- 24 – 28 wonton wrappers
Instructions
- Swirl the olive oil in a medium saucepan over medium heat, then add the chopped onion and cook until soft and translucent. Stir in the garlic for a few minutes until fragrant, then the spinach.
- Cover until the spinach leaves are wilted, then stir in the cheeses. Put the mixture in a strainer over the pot or the sink and push down slightly to remove any excess juices.
- To shape the wontons: Put a spoonful of filling in the middle of the wonton wrapper. Wet the edges with your finger, then pull two points up and press together. Press edges together to make a triangular shape. Brush both sides with olive oil and bend the pointy edges over. Repeat.
- Preheat the air fryer, then air fry at 370 F. for about 4 minutes or until browned and crispy. Make sure you leave space around the wontons so the air can circulate around them. You may have to work in batches.

You can, but I haven’t fully tested that out yet, Judith. Unfortunately, my air fryer was on the Cosori recall list, so now I’m waiting for Cosori to get around to sending me a replacement air fryer.
I will post notes on how long and temp once I figure that out!
