When I social-distance visited my parents, they gave me a HUGE bag of fresh spinach from their garden. I was super happy because spinach is delicious both fresh and cooked, but still, it was a really really BIG bag. So I went searching for spinach recipes. And I found that spinach guacamole is a thing. Who knew? I ought to have guessed … I mean, I’ve made asparagus guacamole before and totally loved it. Spinach guacamole is not so far from that, but it’s even easier because it’s made with FRESH spinach. Nooooo cooking required. Ready in minutes.
The other thing I love about spinach guacamole? It’s a super beautiful vibrant green color … and it STAYS that way! None of that browning that typically happens with guac. This guacamole is silky and creamy, it’s got that bit of garlicky bite, a little tang from the lemon, a little salty undertone, but no taste of spinach. Yet it doesn’t turn brown. Hurrah! It’s everything I always wanted in a smooth guacamole. I could snack on this stuff for days (and, since I have 4 ripe avocados and still a big pile of spinach that needs using, I might have to, but I totally don’t mind. I think I could eat Mexican food every day and never tire of it.)

Ingredients
- 1 ripe avocado
- 1 – 3 cloves garlic, peeled
- 2 Tablespoons of your favorite salsa (I used my Cilantro Almond Salsa – recipe here)
- A handful of fresh spinach leaves
- Juice of half a lemon
- A pinch of salt
Instructions
Add all ingredients to a mini food processor or handi chopper, then process until smooth, stopping to scrape the sides if any pieces don’t want to blend in or get stuck to the sides, then blend some more.
Enjoy with your favorite chips or Mexican food! Refrigerate any leftovers in a covered container in the fridge.
