Strawberry Basil Glazed Salmon

Description

A sweet, savory strawberry basil glaze is the perfect way to make juicy, flavorful roasted salmon AND make the best of fresh summer strawberries while they are in their prime. Served over a bed of greens and strawberries with more of that addictive glaze for a dressing, this is a light and refreshing summer meal that feeds your body with so much goodness.


Ingredients

For the strawberry basil glaze:

  • 1 Tablespoon extra virgin olive oil
  • 1 1/2 Tablespoons chopped onion
  • 1 clove garlic, peeled & chopped
  • 1 cup sliced strawberries (fresh or frozen)
  • 1 Tablespoon maple syrup (or honey)
  • 1 Tablespoon rice vinegar
  • 1/2 Tablespoon dijon mustard
  • A healthy sprinkle of dill (fresh or dried)
  • 46 good-sized fresh basil leaves, chopped (about 12 teaspoons)

For the rest:

  • 1 or 24-oz. salmon portions
  • Salt & freshly ground pepper
  • For serving: fresh spinach or greens, sliced strawberries, red onion, avocado, roasted sunflower seeds or other toasted nuts, and crumbled feta or goat cheese.

Instructions

  1. Preheat the oven to 350 F. Line a small rimmed baking sheet with silicon baking mat or spray with cooking spray.
  2. In a small frying pan over medium heat, add the oil, then the onion and garlic. Saute until soft and translucent, then add the strawberries, maple syrup, rice vinegar and mustard. Stir and cook for several minutes until the strawberries start to soften and cook down slightly. Stir in the dill and basil. Cook for a couple more minutes.
  3. Remove from heat, pour the sauce into a mini food processor or small blender cup and pulse until relatively smooth (leaving little chunks of berries if desired).
  4. Pour a little bit of the sauce into a small cup, saving the rest for later. Salt and pepper both sides of the salmon fillet(s), then use a brush to coat both sides with the sauce. Set the salmon (skin side down) on the prepared baking dish and put in the oven to roast for 10 – 15 minutes or just until the salmon flakes easily with a fork. (It will continue to cook after you remove it from the oven, so a little underdone is okay.)
  5. Suggested serving: serve the hot glazed salmon over a bed of greens with fresh strawberries, thinly sliced red onion, avocado, sunflower seeds or nuts and a bit of crumbled feta or goat cheese on top. Drizzle with the reserved glaze for sauce or salad dressing. Enjoy!
