Ingredients
Scale
- 3 Tablespoons butter, melted
Dry ingredients:
- 3/4 cup all purpose flour
- 3/4 cup white whole wheat flour
- 1 Tablespoon sugar
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
Wet ingredients:
- 2 teaspoons vanilla
- 1 egg
- 1 1/2 cup milk (plus a little extra)
- 1/2 cup mini chocolate chips (or to taste)
For the tacos:
- Chunks of fresh strawberries
- Light whipped cream
- Chocolate and/or maple syrup
- Mini chocolate chips
Instructions
- Melt the butter and set aside.
- In a small mixing bowl, mix together the dry ingredients, then add the wet ingredients and stir to mix well. Stir in the melted butter, a little at a time, until the lumps are pretty much gone. Add just a bit more milk if needed to ensure a thin batter. Stir in mini chocolate chips to taste.
- Heat a nonstick frying pan over medium heat, then reduce heat (if needed) to medium low. Rub a bit of butter over the bottom of the pan, then pour batter in spoonfuls into the pan to make pancakes about 6 inches in size. Let brown on bottom, then flip and brown on the other side.
- Set two pancakes on a plate, add a bunch of strawberries down the center of each. Top with whipped cream, syrup and/or chocolate chips as desired.
