Ingredients
For the strawberry simple syrup:
- 1 cup strawberries
- 1 cup sugar
- 1 cup water
- 1 teaspoon vanilla extract
For kid-friendly slushies:
- 1/2 cup strawberry simple syrup
- 1/8 – 1/4 cup lemon juice
- 1 – 2 cups fresh strawberries
- 1 cup water
- about 2 1/2 cups ice
For adult slushies: add 1/4 – 1/2 cup limoncello or lemon vodka, add more syrup & lemon juice, to taste
Instructions
- Make the simple syrup by stirring together the berries, sugar, water, and vanilla in a small saucepan over medium high heat until boiling. Reduce heat to a simmer and let cook for about 10 minutes. Remove from heat and let cool. Strain out the strawberries, reserving them for use in the slushies.
- To make the slushies: Blend together the strawberry syrup, lemon juice, fresh strawberries, water and ice. (If making adult slushies, add the alcohol in before blending.) Taste and adjust the amount of ice, syrup or lemon juice to your liking. Pour into glasses and enjoy!
Notes
Total time does not include cooling time for the syrup. You’ll have plenty of syrup left to make more batches of slushies–store it in the fridge in a covered jar.
You can use the strawberries from the syrup in the slushies as well.
You may need to add both more syrup and lemon juice if you’re using limoncello.
