A low-carb recipe inspired by Delish … with low fat Sriracha ranch dressing and crushed Doritos.
A gorgeous, simple way to enjoy fresh summer tomatoes that will have everyone begging for more! This is a super simple recipe that even kids can help make. It’s a feast for the eyes, low in carbs, yet high in flavor and super fun for kids and adults alike.
I had just a handful of small tomatoes from my mom’s garden, the first of the season. My dad didn’t really want me to take them, but I saw a bunch more tomatoes starting to ripen on the vines and knew it would be no time before they were swimming in tomatoes. I left him two and took the rest. Yeah, sometimes I’m a little devil. I didn’t have too much remorse, though, because I know how things go when the garden goodies start to come in. I know they will be totally overwhelmed with tomatoes and all the other veggies they planted. They always plant too much, but that’s part of the fun too.
Since I just had a few tomatoes, I really wanted to make the most of them so I went searching for tomato recipes. When I stumbled across this stunning idea from Delish, well, I was immediately smitten. THIS was it! The perfect use for my precious few tomatoes.
I loved the idea, but I decided to add my own little twist. Delish used taco meat, lettuce and sour cream for toppings. And you can totally do that if you want plain old taco tomatoes. They’ll still be beautiful. Your picky eaters will probably love them just like that.
But if you want to kick up the fun, then ditch the sour cream and go with my Sriracha Ranch dressing instead. Stir in some yummy beans with the taco meat and add a few crushed Nacho Cheese Doritos on top. The additional creamy texture from the beans, the crunchy texture from the Doritos and the little kick and flavor boost from the Sriracha Ranch really take these tacos from cute to oh. my. gosh. good! I actually had to make myself a fourth “taco” because I just couldn’t get enough. And then I was out of tomatoes. (Sad face.)
But there will be more! I’ll be seeing mom and dad again next weekend and I’m sure they’ll have a BUNCH of things to share from the garden again. I have to admit I’m a little giddy just thinking about it.

PrintTaco Stuffed Tomatoes
Ingredients
- Several ripe fresh garden (or farmer’s market) tomatoes
- Cooked taco meat (I used my copycat Qdoba taco meat-recipe here)
- Cooked beans (optional)
- Shredded cheddar cheese
- Chopped romaine or green leaf lettuce
- Sriracha ranch dressing (recipe here)
- Crushed Nacho Cheese Doritos or other tortilla chips
Instructions
- Remove any stem from the tomatoes and set them stem side down. Cut a slit in each tomato almost all the way down to the bottom, but leave a bit so the tomatoes are still attached. Rotate the tomatoes and cut one or two more slits, depending on the size of the tomato.
- Warm the taco meat and beans together. Gently push open the “petals” of the tomatoes and stuff the middle of the tomatoes with the taco mixture. Top with shredded cheese and some chopped lettuce. Drizzle with some of the sriracha ranch and then top with a bit of crushed Doritos. Enjoy by using a fork to cut open the tomato “petals”.
Notes
For gluten free, skip the Doritos and use gluten free tortilla chips.
