Broccoli Cheese Tostada

Per serving:

  • 1 tostada shell (preferably freshly air-fried: recipe here)
  • About 1 oz. shredded cheddar or Mexican blend of cheeses
  • 1/3 cup refried beans (best if they’re homemade-recipe here!)
  • About 1 cup of fresh broccoli
  • 1/4 cup sweet onion, roughly chopped (optional, not pictured)
  • A bit of olive oil
  • Red Robin Seasoning or your favorite seasoned salt
  • About 2 Tablespoons creamy tarragon mustard sauce, thinned – recipe here

Instructions

  1. If air-frying the tostada shell, do that first. Make sure you have the creamy tarragon mustard sauce prepped and ready. Take a tablespoon or a little more (for each serving) and thin with about 2 – 4 teaspoons of milk.
  2. Next set the broccoli and onion (if using) in a bowl and drizzle with a bit of oil, then sprinkle with seasoning and toss to coat. Air fry the broccoli at 370 F. for about 5 minutes or roast in the oven at 400 F. for 15 – 20 min., until crisp tender. Chop the broccoli into small bits.
  3. Cover the surface of the tostada shell with cheese and set in the hot toaster oven or microwave at 375 F. for just a few minutes, until the cheese is melted and bubbly.
  4. Make sure the beans are warmed – 30 seconds in the microwave seems to work for me for one serving.
  5. Take the cheesy tostada shell and spread with the warm beans, then top with the broccoli and drizzle with sauce. Enjoy!

Notes

Cooking time will vary depending on whether you use an air fryer or oven to roast your broccoli.
