These Dragon Noodles are so fiery good!

Drenched in a sweet, spicy sauce, these Dragon Noodles are loaded with chicken, a mix of tender and crunchy vegetables, and scrambled eggs for a healthy, delicious and FIERY meal that you can throw together in 30 minutes or less. When you’re craving hot, spicy noodles, this is the recipe to turn to!

Just four simple steps and you’ll be eating good!

  1. Whisk together the sauce.
  2. Cook the noodles.
  3. Saute the veggies.
  4. Cook the eggs and toss everything together. Enjoy!

One day many months ago my cousin, who loves spicy food and grows hot peppers every year, posted on facebook that he and his wife were cooking Dragon Noodles for dinner. That sounded right up my alley. So I started looking at recipes for Dragon Noodles. It seems like everyone makes them a little bit differently. But I have to say, they all looked really good! I tucked that idea away in my head until the right time came to make them.

Well, then last weekend I visited my parents for the 4th of July. And they had some bok choy growing in their garden. Much of it had gone to seed already,. But I looked amongst the heads and found a few that hadn’t yet blossomed! So we picked them and brought them in. I brought a couple small heads home with me. And I left the rest for mom and dad to enjoy.

Today is the 4th of July. While everyone else is out celebrating, BBQ-ing and lighting off fireworks, I’m home, enjoying having a day to myself. I threw a little pottery this morning, then went to pool over lunchtime. And I came home FAMISHED. Thinking about that yummy bok choy, it seemed like the perfect day to try Dragon Noodles! I know, it’s not your traditional American 4th of July meal. But in my mind, this sweet & spicy meal celebrates the diversity of our country.

Let’s take a moment today to remember to embrace and celebrate the rich beauty in ALL Americans. Especially the Americans who are different. Send out a little love and kindness to them today.

Dragon Noodles

Ingredients

For the fiery dragon sauce:

  • 1/4 cup pineapple juice
  • 12 Tablespoons soy sauce
  • 2 Tablespoons Sriracha (or to taste. I used my homemade Sriracha – recipe here)
  • 2 teaspoons peanut powder or peanut butter
  • 1/21 teaspoon fish sauce (optional)
  • 1/21 teaspoon honey

For the noodles:

  • 2  oz. brown rice or whole wheat noodles 
  • 1/22 teaspoons hot pepper oil
  • 12 teaspoons sesame oil
  • 1/2 of a medium sweet onion, sliced thin
  • 24 cloves garlic, peeled & chopped
  • 3 oz. shredded cabbage (red or green)
  • 34 oz. bok choy, stems separated from the leaves and chopped
  • 1/2 of a sweet bell pepper, cut into strips
  • 12 eggs
  • 1/31/2 cup leftover rotisserie or salsa chicken, chopped
  • For garnish: sesame seeds and/or chopped roasted peanuts or cashews, cilantro leaves

Instructions

  1. In a small bowl, whisk together the sauce ingredients. Taste and adjust seasonings to your liking and set aside.
  2. Cook the noodles according to package directions. 
  3. While the noodles are cooking, in a wok or large saute pan, heat the hot pepper oil and sesame oil over medium heat. Add the onions and cook until soft and translucent, then stir in the garlic, cabbage, chopped bok choy stems and bell pepper strips. Saute until the cabbage and peppers are soft and the bok choy stems are crisp tender.
  4. Make a well in the center, add a bit of oil, crack the egg(s) in and scramble them, then stir them into the mixture. Add the chicken and sauce and toss to coat. Cook until the chicken is hot, then stir in the bok choy leaves. Taste and add soy sauce, salt or Sriracha to your liking. Serve warm garnished with sesame seeds or chopped nuts and fresh cilantro leaves. Enjoy!

Notes

For extra fire, use more hot pepper oil or toss in some finely chopped hot peppers of choice into the sauce.

For a lower carb option, use zoodles in place of the noodles. Add them to the stir fry instead of boiling.
