For the popcorn mix:
- 10 – 12 cups popcorn, air popped
- 2 – 3 cups nuts of choice (I like peanuts, cashews, almonds, but feel free to switch it up to your liking)
For the toffee glaze:
- 3 Tablespoons grass-fed butter, melted
- 3 Tablespoons honey
- 1/4 cup + 2 Tablespoons brown sugar
- 2 teaspoons vanilla
- 1/2 teaspoon salt
For the top:
- 5 – 6 oz. quality chocolate, melted
- About 1 teaspoon flaked sea salt
Instructions
- Preheat oven to 300 F. Line a large rimmed baking pan with silicon baking mat or parchment paper. Pop the popcorn and spread it out in a thin layer on the baking sheet, then sprinkle with nuts.
- In a small mixing bowl, mix the melted butter, honey, sugar, vanilla and 1/2 teaspoon salt until fully mixed.
- Drizzle the sweet buttery mixture over the popcorn and nuts.
- Bake at 300 for 45 minutes, stirring at 15 and 30 minutes and again when you remove from the oven to give as many pieces of popcorn a chance at grabbing some of that lovely toffee crunch.
- Let sit until cool, then drizzle with melted chocolate and sprinkle with flaked sea salt right away. Wait until the chocolate sets fully before breaking into pieces and packaging it up.
