Ingredients
Scale
For each Fresh Mex bowl:
- About 1/4 cup Cilantro Lime Rice (Recipe here)
- About 1/4 cup seasoned black beans
- About 1/4 cup chopped, cooked turkey (or chicken)
- About 1/4 cup cooked sweet corn
- About 1 cup fresh chopped lettuce
- About 1/4 cup shredded Mexican blend of cheese
- Fresh cilantro leaves
- Fresh garden tomato, chopped or cherry/grape tomatoes, cut in half
- Wedges of lime
- Your favorite salsa (I used my Copycat Chili’s salsa with added cilantro-recipe here)
Instructions
- Heat the rice, beans, turkey, and corn.
- For each serving, arrange the rice, beans, turkey, corn and lettuce in wedges of the bowl.
- Top with cheese, tomatoes and cilantro and serve with salsa and wedges of lime.
- Enjoy!
Notes
Avocado or guacamole would be an excellent addition to the bowl.
