A creamy blend with fresh peaches, frozen honeydew, a bit of honey and vanilla plus a sprig of fresh mint leaves to add a tiny bit of zing.
I created this smoothie for that Saturday-morning-yoga dilemma when I get up early, start my foodie party, spend too much time drinking tea and looking at delicious recipes, then scramble to get something in my belly before my Vinyasa yoga class. I can’t go on an empty stomach because it’s too hard of a workout to make it through without something to fuel my workout, but I don’t want anything heavy before yoga either. Also, I’m always out of time just before yoga so yes, a smoothie suits me perfectly.
I blend it up, pour it in a glass, take a few quick shots so I can share it with you, then zip off to yoga, gulping down my smoothie on the way. This one went SO fast. All through yoga I was remembering the lovely taste of it. Honeydew is my favorite melon and it blends up SO nicely. I used cottage cheese because I had some I needed to use up and you couldn’t tell it was cottage cheese at all when I was done. It tasted rich, creamy, sweet, and fruity.

PrintVanilla Mint Peach Honeydew Smoothie
- Prep Time: 10 minutes
- Total Time: 10 minutes
- Yield: 1 or 2 smoothies 1x
Ingredients
- 1 fresh peach, peeled and cut into chunks
- 1 cup frozen honeydew chunks
- 1 Tablespoon honey
- 1/2 teaspoon vanilla
- 4 oz. low fat cottage cheese
- 1 cup milk
- a sprig or two of fresh mint leaves
Instructions
- Put all the ingredients into a blender and blend until completely smooth.
- Pour into a glass (or two), garnish with a sprig of mint, and enjoy!
