A perfect dance of flavors in one super creamy, vibrant, beautiful hummus! With creamy white beans as the base, a hint of sweet and earthiness from the beet, a kiss of lemon, mellow roasted garlic (and a bit of fresh) and of course, tahini and olive oil too. It’s hummus like you’ve never quite experienced before. Surprisingly, the beet doesn’t take over the flavor. It mellows it all out. And somehow adds to the creamy texture. This vibrant red roasted beet hummus is bound to become your new favorite hummus.
I adapted this recipe from Minimalist Baker. I was so curious how it would taste. But I couldn’t resist that gorgeous color! One taste of the warm, creamy red hummus and I was totally hooked. I could seriously eat this stuff by the spoonful. This easy blended dip is THE BOMB! Whether you’re a fan of beets or not, I think you’re going to love it.
This all started with a quick stroll through the produce aisle, where I spotted some beautiful beets. I’ve only just recently begun to warm up to beets. As a child, I hated them. My mom would make pickled beets. Oh, I was NOT a fan back then. But my friend Val raises them in her garden. And her beets grow GINORMOUS (to use Val’s words). Lucky me, she shared some.
She mentioned how good beets taste when they’re roasted. So I tried roasting Val’s beets. When I pulled them out of the oven, I found them beautifully caramelized and perfectly tender. So delightful! And right then and there, I did a total 180 on my feelings about beets. Now I count beets amongst my friends in food. I may never like them pickled. But I think roasted beets are so beautiful, sweet and tasty.
Are Beets Good for You?
By now, you might have guessed the answer is a resounding YES. Now only are they beautiful, beets are low in calories, high in fiber and include SO many nutrients. I personally consider beets a superfood. What can beets do for you?

Ingredients
For roasting the beet:
- 1 beet (about 2 1/4 – 2/12 inches in diameter)
- 2 – 3 cloves garlic, peeled & chopped into chunks
- A drizzle of olive oil
For the hummus:
- 1 3/4 cup cooked white beans or chickpeas (or 1 15-oz. can)
- 1 – 3 cloves fresh garlic
- Juice of half a lemon
- 1 – 2 Tablespoons tahini
- 1 – 4 Tablespoons extra virgin olive oil
- Cooking liquid from the beans as needed, to thin
Instructions
- Preheat the oven (or toaster oven) to 400 F. Peel the beet and chop the red flesh into chunks. Set the beet chunks and garlic on a rimmed baking sheet and drizzle with 1/2 – 1 Tablespoon or so of extra virgin olive oil. Toss to coat, then sprinkle with salt and set in the oven to roast for about 40 minutes or until the beets are nice and tender when poked with a fork.
- Put the roasted beets and garlic in a small food processor with the beans, fresh garlic cloves, lemon juice, 1 Tablespoon of tahini and 1 Tablespoon olive oil. Process until smooth, adding olive oil or bean cooking liquid to thin as needed. Taste and add more tahini or salt as desired. Serve with veggies, pita crisps, or use as a pretty spread on sandwiches or wraps. Enjoy!
Notes
For more robust lemon flavor, stir in the zest from the lemon.
